Hygiene and food safety in school feeding programs in Tandil: insights from an extension-research experience

This paper presents a university extension–research experience developed in school dining rooms in Tandil,
where students, teachers, and researchers worked together with the educational community to strengthen food
hygiene and safety. The objective was to evaluate and promote food hygiene and safety practices through a mi
crobiological and hygienic–sanitary diagnosis, participatory feedback sessions, and awareness-raising activities
aimed at dining rooms cooks, support staff, and teachers. The student project “Hygiene and Safety in School
Dining Rooms: Prevention to Avoid Illness” is highlighted, which involved designing posters and brochures used
in the cafeterias. The perspectives of students, lecturers, and cooks reveal shared learning experiences, chal
lenges, and achievements, reinforcing university extension as a space for social and academic transformation.
